New interior design for Restaurant Kolvig
Restaurant Kolvig is located on the building’s ground floor—right by the rushing Ribe Å, with views of Skibbroen, Hovedengen and the beginning of the Wadden Sea National Park.
2026 brought changes at Restaurant Kolvig. The restaurant needed a new identity and a new look, and Interior Designer Bettina Therese was tasked with leading the transformation. The goal was clear: to create more coziness, warmth and a Nordic bistro vibe.
The task called for a delicate balance. The interior needed renewing without losing the place’s history and distinctive character. Existing elements were therefore preserved and reused where it made sense, while new, comfortable seating and carefully selected materials add a more inviting atmosphere to the space.
In collaboration with apto plus, Extend was integrated as a flexible and aesthetic solution that divides the restaurant into smaller, intimate spaces. The system creates structure and visual calm without closing it off.

History meets rustic, Nordic style and Ribe DNA
The building holds a piece of Danish history. The property was built around 1600 by Mogens Graves and around 1850 came into the ownership of Frederik Kolvig. Here, he established the merchant’s yard Kolvigs Gaard, which, among other things, traded in building materials and general goods.
In 2021, the historic building was restored, and today Restaurant Kolvig is housed in the lower rooms.
One of Bettina’s first moves was to develop a new colour palette that could tie the interior together and create a better spatial experience. The inspiration was found in the house itself: the preserved brick walls and an old painting that surfaced during one of the project’s many visits to Ribe’s second-hand shops.
From there, the interior took shape with respect for the building’s history and an eye for new materials, colours and functions. The result is a rustic, Nordic bistro where old and new meet, and where the local Ribe identity can still be felt.
